Are you a maple producer? On average, how many trees do you tap per year?

How many personnel work at your operation during sap collection and boiling? Are they full-time employees, part-time employees, and/or volunteers (family, friends, etc.)?
How is your sap stored? Please be specific.
(ex. 3 open-air stainless steel tanks, 1 refrigerated tank at 40°F, one 1000 gallon storage tank, etc.)
When the sap is flowing intermittently, how much time (in minutes, hours, or days) do you estimate passes between sap collection and the start of boiling?
